I am using the [contact-form] shortcodes to insert a feedback form (within an "accordion" near the bottom of the page).
I am uncertain as to whether or how to use an HTML <post> command to collect data in custom questions I've created.
Can you help me to collect more from the user on a contact form than simply text-field input?

I guess you are using Contact Form 7 Plugin
IF so you can add more fields using the administration page of Contact Form.
You can see a Generate Tag(A dropdown for you to add a custom fields).

As I can see, you are using Gravity Forms plugin. You should have option in admin panel to add whatever you need.
